The blue tea that turns purple.
Dried butterfly pea flowers brew a deep, bright blue, and when you add lemon, it turns purple right in the glass. On its own, it tastes mild and a little like hay: yum for some, not our fave. Mixed into lemonade, that hay flavor disappears, so we mostly use it for color, in lemonades, cocktails, mocktails, and homemade sodas. You can also use it to add a natural blue tint to food.
Our signature drink is the Butterfly Glitter Lemonade, and the recipe is below.
Ingredients: butterfly pea flower
Allergens: made in a facility that handles tree nuts.
Caffeine: none
For one drink: ½ teaspoon is enough to get the color and the color change.
Butterfly Glitter Lemonade
Makes a 32 oz pitcher.
- Steep 3 to 4 teaspoons of Butterfly Pea Flower in 8 to 10 oz of water, anywhere from room temperature to boiling. Hotter water brings out the color faster. Steep until it's as deep a blue as you like, then strain out the flowers.
- Fill a pitcher with ice. Add 4 oz fresh lemon juice, 4 oz simple syrup, and your butterfly pea brew, and watch it turn from blue to purple.
- Top with water, still or sparkling.
- Sprinkle in edible glitter and stir. We use Brew Glitter's Clear Shimmer.
Double everything for a 64 oz pitcher.

Questions
Why does it turn purple?
Butterfly pea reacts to acid. Add lemon or lime and the blue shifts to purple.
Does it have caffeine?
No. It's a flower, so it's naturally caffeine-free.
