About Gesha White Honey, this coffee is highly floral and designed to surprise. Bright fruit notes and lifted sweetness highlight how thoughtful processing can expand flavor while still honoring the coffee’s natural character. It is vibrant without being overwhelming, playful yet precise, and distinctly modern in expression.
Behind the coffee is Sebastián Ramírez, a fourth generation coffee producer with more than 13 years of experience. Early in his career, Sebastián began exploring fermentation as a way to express deeper flavor stories. Today, he is recognized for his work with advanced processing techniques such as co-fermentation and carbonic maceration, always with the goal of making coffee more accessible and exciting.
This coffee is processed using Sebastián’s white honey method, a process that appears simple but is carefully controlled at every stage. Fully ripe cherries are placed in sealed tanks and inoculated with a signature yeast culture, fermenting for 48 hours in a low-oxygen environment. The coffee is then pulped, gently washed, and patio-dried for two to three weeks until it reaches ideal moisture content and balance.
